Chocolate Ganach Cake / Candied Roses


Alright, I am officially drooling over the thought of chocolate now. With that in mind, I just purchased the a new 'Dove' Dark chocolate bar infused with Raspberry. I am not pleased. Way too much going on in that bar. I am a dark choco. girl and can eat 72% plain by the way. If they cut the amount of raspberry flavor in 1/2, it would be good. That and if it were Godiva! Dove seems to waxy. Alright, So this cake was only used with the best of the best of cocoa powders! That would be Valrhona!!...Makes your chocolate cakes and cookies that much better..trust me. Three layers of cake and a chocolate ganache filling of course. Then topped with what more that more of that!
The Candied Rose petals really make this cake. The contrast between the two, really are eye catching. That and the Petals are so EASY! First lay out your Rose petals on some Parchment paper over night, so they are dried.
Mixing some water and egg whites together, brushing them onto clean, unbruised petals with a pastry brush and adding your sugar right away!..and if you want to be creative, color your sugar! The more sugar added will make it more hardened and crystalized (if you are looking for that look)..
