Tangy Key Lime Pie...


This was my second time making Key Lime pie. First time didn't go to according to plan, being that I baked it in a cake pan, Oopsi! ( think I ate it from the inside of the pan itself ) Thanks to the wonderful FCI, I now understand all my faults and how to never let that happen again. EVER. :) ... Not so picturesque either.
For the crust:
  • 1 1/4 cups crushed graham crackers (about 8 long rectangles)
  • tbsp sweetened coconut flakes (optional)
  • tbsp unsalted butter, melted
1. Prebake oven to 350 degrees farenheit,
2. Place in a food processor until crumbly and combined. Pressing into pie dish, making sure it is all up on the sides so the custard will not leak out when filled.
3. Prebake the crust for 12 -15 minutes until golden.
4. Remove and all to cool, completely.

Filling:
  • 14-ounce can sweetened condensed milk
  • large egg yolks
  • 1/2 cup Key lime juice

1.Whisk together condensed milk and egg yolks in a large bowl.
2. Pour in lime juice and whisk until ingredients are well combined. Set aside (mixture will thicken as it rests). 
3. Pour mix into pie crust. Make sure filling is spread evenly and against the edges of the crust. Bake 15-17 minutes.
4. Remove from oven and cool completely on a cooling rack before placing in fridge to chill. Allow to chill in fridge for at least 4 hours to set before serving.
5. Garnish with whipped cream, limes, or lime zest.

Stawberry Lemonade Adult Bev. !


Happy Monday! now sit back and chill out with a nice icy treat / beverage.

...And that you ask? My choice is always a snow cone :)


Replicating the cookies from my previous posting, " Strawberry lemonade cookie Treats " in a mixed adult drink!@#%#^...need I say more?!

Forget the lemonade stands.

* For the Simple Syrup = Add equal parts Sugar & Water (2 cups each) in a sauce pan, along with 2 tablespoons lemon juice, sliced strawberries and lemon. Place on Medium heat for about 15 minutes. Simple Syrup is done when there are no Sugar crystals visible. Chill in the refrigerator for 2 hours or until completely chilled.

>>Add in desired amount of Vodka to a shaker along with plenty of ice and Simple Syrup Mix.
>>>>Shake, Pour, ENJOY!!

Strawberry lemonade Cookie treats!

Summer is here and the heatwaves have begun! Let there be a cool off snack in the midst of a ...blackOUT!....(Yes, I said it)..
....................................
These sweet treats are almost impossible to put down. I dare you to stop even eating the cookie dough! Satisfyingly sweet with bits of lemon zest in every bite.
............to add some more fun in for the kids, you can always add in some yellow food coloring when making the cookie dough! Same way with the Icing, adding a red drop to incorporate the Strawberry / Lemon Cookie  :)

Chocolate Covered Strawberries and Mommy's Day!


* Shown above are some beautiful, LUSCIOUS Chocolate covered Strawberries! Perfect for any special occasion, that being said this was for my mommy's cake for Mother's Day. We all dug in and devoured it! Rich in flavour with Dark Chocolate cake and layers of Strawberry Buttercream (Swiss - Meringue) and a covered with a Dark Chocolate Ganache. *
 Things you will need:
1. Fresh Strawberries from your local market.
2. Hershey's Chocolate Chips
3. Decoration : Sprinkles, Coconut, Crushed Nuts..etc
4. Double Boiler (Boiling water in a pot and small stainless steel bowl to fit over it)
5. Wax Paper
7. Hands ready to get messy!! (So no fussy people allowed) :)
 How to make:
1. Start off by cleaning your fruit in the sink, then pat each individual dry, I mean DRY with paper towels. (if you don't the chocolate will look like oober poop). That being said, dry your BERRIES!
2. Set DRIED berries on a nice sheet of Wax Paper.
3. Have Decorations accessible in bowls, ready for use.
4. Place Chocolate Chips in small bowl over Boiling pot of water. Once boiling, allow to simmer so Chocolate does not burn! Stir until melted, this may take a few minutes.
5. When Chocolate is silky looking and free of any unmelted Chips, bring to station where Strawberries are.
6. Do a pinky test before applying on to Strawberries. Temp. should be luke warm and not hot! (Strawberries will go bad fast).
7. Once lukewarm, dip Berry in bowl of chocolate holding on by the stem.
8. Cover completely by moving in circular motions until a nice coat is on.
9. Place back onto Wax Paper making sure there is enough room in between each Berry.
10. Quickly decorate with toppings of choice before Chocolate hardens.
11. When each Strawberry is done being dazzled, place in refrigerator for a few hours or until ready!
